IRISH SODA BREAD       Marion Cunningham

4 cups all-purpose flour

1 teaspoon baking soda

1 1/2 teaspoons salt

2 cups buttermilk

Makes one 8-inch round loaf

Position rack in center of oven and preheat to 375°F. Grease an 8-inch glass pie plate; set aside. Put flour, baking soda, and salt in a bowl and stir to blend. Add buttermilk and stir until dough comes together. Turn it onto a lightly floured work surface and knead gently. Pat dough into a 6 inch disk, slash an X across the top, cutting 1/2 inch deep, and place dough in the greased pan. Bake 50 minutes or until the slash has widened and the bread is golden brown. Transfer to a rack to cool, then slice or wrap in a moist towel until ready to serve.
